Vegan Scrambled “Eggs”

1 serving firm tofu
1/3 avocado
1/2 medium tomato, diced
1/4 small onion, chopped
1 cup baby spinach
1 clove garlic, pressed
Fresh rosemary to taste
Sea salt to taste
Cracked pepper to taste
Hot sauce (optional) to taste
1 teaspoon olive oil
1. Combine all ingredients EXCEPT baby spinach, mashing slightly.
2. Heat olive oil in frying pan on medium-high heat and add the mashed ingredients.
3. Add baby spinach.
4. Cook until slightly browned and baby spinach is withered.
