Introducing Asian healthspiration: Yuba (the protein-rich ‘skin’ of thick soymilk) stuffed with mushrooms and soft tofu
Yuba is one of the best ingredients used in Asian vegetarian cuisine (or just Asian cuisine in general). Derived from soymilk, it has a wonderful texture and tastes soft and mellow, and is incredibly versatile. For this recipe, my mother simply used chopped soft tofu, diced bell pepper and shiitake mushroom with a dash of miso seasoning for the filling, and then wrapped it in yuba (like a burrito) and put it in the oven to bake. Once the yuba crisps, take it out of the oven and cut it into beautiful slices to serve, for a snack, or lunch, or dinner!
