Peal zucchinis, cut and grate them with a blender or a large side of grater. Now put them away for a while – let the water drain and pour it out. Otherwise our pancakes won’t keep their form.
Add some flour and a pinch of salt. Mix everything until thoroughly combined.
Heat a large pan, add some oil. Take a spoon and put zucchini mixture on the pan. Cook the pancakes for about 2 minutes on each side until the bottom is crispy and golden brown.
Then add some water, so pancakes are stewed a bit. Keep covered for some time, so the dish is cooked properly.
